Fresh, Local Spinach Now Available Year-Round

GoodLeaf introduces new product to its family of leafy greens grown in a vertical farm in Guelph

The line of fresh — and local — leafy greens coming from GoodLeaf Farms continues to grow.

Canada’s first and largest commercial indoor vertical farm has added Ontario Baby Spinach to its lines of microgreens and baby greens — the fourth new product introduced by GoodLeaf this year.

“GoodLeaf prides itself on offering a family of produce that is fresh and packed with nutrients,” says Jacquie Needham, Accounts Manager at GoodLeaf Farms. “Spinach is the perfect addition, checking all of the boxes from a health perspective and giving Ontario consumers a local option they may not otherwise have out of season.”
 
GoodLeaf’s Ontario Baby Spinach is succulent and mild. It is an excellent source of Vitamin K, a good source of Vitamin A and a source of Vitamin C. Ontario Baby Spinach can be enjoyed as a tasty addition to wraps, sandwiches, pizza, burgers and more.

GoodLeaf is one of only a small number of vertical farms in North America that grows Baby Spinach.



Ontario Baby Spinach in a great base for or addition to any salad; try this Late Fall Salad from John Vetere, the Executive Chef at Ravine Vineyard in the St. Davids area of Niagara-on-the-Lake (serves 4):

In a cold pan, add a glug of olive oil, render 100 grams of chopped bacon over medium low heat until bacon is crisp and almost all the fat has come out. Separate the bacon from the liquid fat and reserve. Bacon will be used on salad.

While the fat is still hot, add in three thinly sliced scallions and two minced garlic cloves and cook over low heat until soft.

Remove from heat and deglaze with 75mL each of sherry vinegar and EVOO.

Season with salt and pepper, set aside.

In a frying pan over medium heat, toast ½ cup of panko bread crumbs with a little bit of olive oil.

Once golden brown, add in one tablespoon garlic powder, give it a toss and remove from pan. Allow to cool to room temperature.

In a bowl, add four cups of GoodLeaf Ontario Baby Spinach and 10 Brussel Spouts shaved thin; drizzle with generous amount of the bacon dressing, mix thoroughly and season with salt and pepper.

Add dressed greens to salad bowls and top with ½ cup Celtic blue cheese diced into cubes, crispy bacon pieces and toasted bread crumbs. Enjoy!

Because GoodLeaf’s vertical farm is indoors, it is a safe, controlled environment free of pesticides, herbicides and fungicides. It is also spared the ravages of extreme weather; there are no concerns that a late frost will kill a young crop, or that a summer drought will dry out the plants.

Earlier this year, GoodLeaf introduced Micro Broccoli, Micro Radish and Ontario Spring Mix. Other leafy greens offered by GoodLeaf are Micro Asian Blend, Pea Shoots, Spicy Mustard Medley, Micro Arugula and Ontario Baby Arugula.
